I finally got around to buying another battery charger for our camera.  yay.  so i have a couple of yummy food pictures to share from our recent indulgences.

last week i found italian sausage at whole foods and made....



manicotti!  the cheese on top is follow your heart mozarella. 
the tomato sauce consisted of crushed tomatoes, red wine, thyme, salt, basil and oregano.
the ricotta was made in a plastic ziploc bag like so:

put in half a container of firm regular tofu
lemon juice
salt
pepper
a handfull of nutritional yeast

add in the fake sausage, zip up the bag and mush it with your hands.  cut one of the corners off and squeeze it into the cooked noodles.  lay them down on a oiled casserolle dish, pour on the sauce and top with the cheese, bake covered for however long the box of noodles tells you.




we've also been making this quite a bit since i found a love for sauerkraut.

but i veganized it.  of course.





 


noodles

4 c flour
5T ground flax seed
15 T water
1/2 cup of soy milk
1 tbsp. vegetable oil
1/8 tsp. fresh ground nutmeg
1 tbsp. salt



filling

sauerkraut (however much you want)
some of my fake cheese, or premade store bought fake cheese http://vegancookery.livejournal.com/5217.html
onions
bacon bits (optional)
chives (optional)
oil

directions

mix all noodle ingredients in a bowl until doughy.

saute onions in some oil.  then put them in a bowl.

roll out dough into a rectangle.  spread out sauerkraut then cheese on top of the dough.  roll it up like sushi and pinch off the ends.  slice it like sushi, about 2 inches thick.  lay them cut side down in the frying pan you fried the onions in.  turn the rolled up noodles over when theyre browned.  top with onions, bacon bits and chives.
