heres a picture of the 'cheesecake' i made.  it ended up not being a cheesecake because i (and katie) couldnt find soy cream cheese anywhere in austin.  the top part is homemade cream cheese and the bottom layer is strawberry silken tofu pie.   i'm gonna try it out today and see which layer tastes best.
